Orange Panna Cotta with Orange Jelly

Orange Panna Cotta with Orange Jelly

Ingredients
  

  • 400 grams organic coconut milk
  • Rind of 1 orange
  • 1 tbsp coconut syrup or 2 tspns xylitol melted in 30ml hot water
  • 2 tsp gelatin

Jelly

  • 1 cup fresh orange juice
  • 1 tsp gelatin

Instructions
 

  • Bloom gelatin in 1/4 cup of coconut milk.
    Heat coconut milk with xylitol & orange rind. Bring to light boil then reduce heat to simmer
    Add bloomed gelatin and mix through
    Pour into greased ramekins or small bowls (to turn out to serve) or glasses and refrigerate for 2 hours to set
  • Bloom gelatin in a 50ml of the orange juice. Warm the rest of the orange juice and add the bloomed gelatin. Stir through. Allow to cool to room temperature. Pour over the top of the set panna cotta
  • Turn ramekins or bowls upside down to serve. Serve with berries

Apple and Rhubarb Crumble

Apple & Rhubarb Crumble

Ingredients
  

  • 1 bunch organic rhubarb
  • 4 medium granny smith apples – or any moderate apple
  • 1 heaped tspn ginger
  • Juice 1/5 orange
  • 2 tbpn coconut syrup
  • 1/2 tspn clove
  • 1 tspn vanilla
  • pinch salt

Crumble

  • 1 1/4 cup oats
  • 1/2 cup teff flour
  • 2 tbsp sesame
  • 3/4 cup cashews
  • 1/2 cup walnuts
  • 1 tbsp coconut syrup
  • 1 tspn vanilla
  • 1 tspn cinnamon
  • 1/2 cup melted coconut oil

Instructions
 

  • Filling
    Wash rhubarb thoroughly and cut to approx. 2 cm lengths. 
    Mix with other ingredients and allow to sit whilst getting apples ready.
    Peel, core and slice apples. Add to the mix. Set aside.
  • Crumble
    Mix all ingredients together with melted coconut oil.
  • Grease and line a baking tray with baking paper. Pour in apple and rhubarb mix
    Scatter crumble on top to make a thorough layer of crumble.
  • Bake for 40 mins at 180 degrees C in a fan forced oven. All ovens will vary so check to ensure crumble is browned but not burnt.
  • Serve hot with vanilla coconut yogurt.

Coffee Panna Cotta

Coffee Panna Cotta

Ingredients
  

  • 400 grams coconut milk
  • 5 tsp espresso coffee
  • 1 tbsp coconut syrup
  • 2 tsp gelatin

Instructions
 

  • Bloom gelatin in 1/4 cup of coconut milk.
    Heat coconut milk with coconut syrup & espresso. Bring to light boil then reduce heat to simmer
    Add bloomed gelatin and mix through
    Pour into greased ramekins or small bowls (to turn out to serve) or glasses and refrigerate for 2 hours to set.
  • Turn ramekins or bowls upside down to serve. Serve with berries

Cacao, chia and Almond Cookies

Cacao, chia and Almond Cookies

Ingredients
  

  • 250 grams ground almond meal
  • 2 tbs chia seeds
  • ½ tbs 1/2 tsp bi carb sodar (aluminium free)
  • ¼ tsp salt
  • ½ cup melted Coconut oil
  • ¼ cup maple syrup/xylitol/stevia
  • 1 tsp Vanilla Powder (unsweetened)
  • 1-2 tsps raw cocoa
  • 100 grams Dark Chocolate chopped or dark Cocao Nibs

Instructions
 

  • Preheat the oven to 180°C and line with baking paper. In a large bowl combine almond meal, chia, bi carb and salt.
  • Stir in liquid coconut oil (melt first if it is solid), followed by sweetener and vanilla. Mix well and stir in chocolate or cocoa.
  • Roll level tablespoons of mixture into balls and place 5cm apart on baking tray and flatten.
  • Bake for 12-15 minutes or until golden.
  • Remove from oven and allow to cool completely before storing in an airtight container.

Banana cake

Banana Cake

Ingredients
  

  • 3 Cups almond meal
  • 3 large bananas puréed
  • ½ Cup coconut oil
  • 1½ Cups shredded coconut
  • ¼ Cup maple syrup
  • 1 tsp baking powder
  • ½ tsp bicarbonate
  • 3 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Pinch salt – Himalayan or sea salt

Instructions
 

  • Mix all wet ingredients well
  • Mix dry ingredients
  • Incorporate dry ingredients into wet ingredientsAdd more coconut oil if required
  • Preheat oven to 180 degrees Celsius
  • Grease all side of tins & Line cake/loaf or muffin tins with baking paper
  • Cook on 180 degrees for 45-60mins. Less for muffins
  • Slice, put into toaster & larger with butter & a sprinkle of salt

Apple chia pudding

APPLE CHIA PUDDING

This dessert is loaded with goodness and is delicious. It’s high in fibre, protein, magnesium, omega 3s, calcium in additional to having other nutrients within it. They’re high in antioxidants,  The stewed apple can be served hot so that it’s just like a hot apple pie.

Ingredients
  

Chia pudding base

  • ¼ cup chia seeds
  • ½ cup almond milk/cashew milk or coconut milk (dilute coconut milk with water as it can be rich)
  • ½ tsp vanilla powder – unsweetened
  • ½ tsp cinnamon
  • ¼ tsp ground clove (optional)
  • 1 tsp maple syrup (optional)

Apple Sauce

  • 1 organic green or red apple
  • Water

Instructions
 

  • Chia Pudding Base
  • 1. Place chia seeds in a bowl. Add spices, milk and maple syrup if required.
  • 2. Pour mixture over the chia seeds and stir. Let stand for a minimum of 20 minutes. This can be done the night before and the chia seeds can be left to absorb the milk overnight, refrigerated.
  • Apple sauce
  • Peel, core and finely dice the apple. Place in small sauce pan with about 1 cup of water. Bring to the boil over medium-high heat. Reduce heat to medium. Cover and cook for about 5-8  minutes or until apples soften.  Allow to cool slightly. Stir.
  • Spoon stewed apple onto chia pudding base. Mix through.
  • Serve as is, warm or with coconut yoghurt.
  • Enjoy, this is a delicious, nutritious and guilt free healthy treat!

Tahini and Sesame Seed Cookies

TAHINI AND SESAME SEED COOKIES

Ingredients
  

  • 1 cup tahini, stirred well (sesame paste)
  • 2 tbsp Xylitol
  • 1 large egg
  • 1 tsp baking soda
  • ¼ tsp salt
  • ¼ cup sesame seeds

Instructions
 

  • Preheat oven to 180°C. 
  • Beat tahini, sugar, egg, baking soda and salt together to combine well. 
  • Roll tablespoons of dough into balls. Dampen your hands with water to prevent sticking. Place balls about 5-7 cm apart on un-greased baking sheets. Flatten slightly by making cross-hatches on top with a fork. Sprinkle tops with sesame seeds. Bake cookies until golden.

Chocolate Chia Pudding

Chocolate Chia Pudding

This dessert is loaded with goodness. Chia seeds have extensive benefits. They’re loaded with antioxidants, essential fatty acids, vitamins, minerals and fibre. They can also absorb 10 times their weight in water, so they’re great for keeping us hydrated, too. They’re also a great source of fibre.

Ingredients
  

  • ¼ cup chia seeds
  • 1 cup almond milk/cashew milk or soy milk (malt free)
  • ½ tbsp raw cacao powder
  • 1 tsp Xylitol – Optional

Instructions
 

  • 1. Place chia seeds in a bowl. Blend the almond milk, cacao powder and stevia in the blender until well mixed.
  • 2. Pour mixture over the chia seeds and stir. Let stand for a minimum of 10 minutes.
  • 3. Stir once more and serve.
